Deep, ruby red in colour, with intense perfumes of cherry chocolate on the nose. On the palate the wine has good depth and power, with a hint of dried cherries from the 39ripasso39 vinification. Smooth and full bodied, with a rounder style, lower acidity and fuller structure than a Valpolicella Classico. Palazzo della Torre covers 26 hectares of east facing vineyard planted between 1962 1989, situated 240m above sea level. Allegrini purchased this vineyard in 1978. Soils are cretaceous and calcareous, with Pergola trentina trained vines planted at 3000 vinesha. Late spring and early summer were dry favouring a regular fruit setting and followed by just the right amount of rain in August. The grapes were harvested on warm, sunny days, characterised by a considerable difference between day and night temperatures which encouraged ripe tannins and nicely perfumed fruit. Franco Allegrini used a modern 39baby Amarone39 version of the traditional 39ripasso39 technique for Palazzo della Torre and dried a proportion of the grapes at the state of the art 39Terre di Fumane39 drying centre, thereby intensifying the character of this vineyard. Grapes to be dried were hand picked during the third week of September, whereas those to be vinified immediately were picked in the first two weeks of October. 70% of the grapes picked were vinified immediately and 30% were left to dry until the end of December when they were vinified and then refermented with the wine from the fresh grapes.
